I'll assume you eat real peanut butter and not some crap like Jif, Skippy, Peter Pan, etc. Since you eat the good (i.e., real) stuff, you have a problem with the oil separating from the ground up peanuts. Here's a solution:
1) STIR: There is no way around this. You have to do a good job of getting all the way down to the bottom or you will still end up with the hard, unspreadable bits at the bottom of the jar.
2) FREEZER: Put the jar in the freezer for an hour. Set the timer on the stove to remind you -- it's hard to spread frozen peanut butter.
3) FRIDGE: Take it out of the freezer and put it in the fridge.
Problem solved. You should only have to stir it the first time and it shouldn't separate again (assuming you eat it in a reasonable time).
